Description
Wahoo, also known as ono, is commonly found in Hawaii and is the largest member of the mackerel family. A fast swimmer, able to approach speeds of 50 mph, it has sharp teeth and strong jaws enabling it to eat squid and other fish. Although it is a member of the mackerel family, its flesh is white and has a taste comparable to Albacore. Wahoo benefits from cooking methods suitable for species with low fat content so the meat doesn’t dry out when cooking. The firm flesh is good grilled or broiled, especially if marinated first to tenderize it and enhance the mild flavor.
